{"id":2804,"date":"2026-01-23T20:57:44","date_gmt":"2026-01-24T04:57:44","guid":{"rendered":"https:\/\/fnerk.com\/?p=2804"},"modified":"2026-01-25T21:24:59","modified_gmt":"2026-01-26T05:24:59","slug":"international-meals-mexico-part-2-jalisco","status":"publish","type":"post","link":"https:\/\/fnerk.com\/?p=2804","title":{"rendered":"International Meals &#8211; Mexico, Part 2: Jalisco"},"content":{"rendered":"<p>For our second Mexican meal, we&#8217;re making a representative dish of the state of Jalisco.\u00a0 Jalisco is a state on the west coast of Mexico which is home to so many of the things that the world associates with Mexico that there is even a saying: &#8220;Jalisco IS Mexico.&#8221;\u00a0 Mariachi, sombreros, and tequila all trace their origins to Jalisco.<\/p>\n<p>And Leigh would know Tequila &#8211; she has a masters degree in the subject, issued directly from Tommy&#8217;s Bar in San Francisco.\u00a0 There may also have been tequila involved in our acquisition of the &#8220;fnerk.com&#8221; domain name.<\/p>\n<p>But let&#8217;s talk about food.\u00a0 Specifically, we&#8217;re going to be making the rich stew known as\u00a0<em>birria,\u00a0<\/em>which has definitely had a moment recently as folks north of the border discovered that it&#8217;s really, really good in tacos.<\/p>\n<p>We&#8217;re going for the more old school version, which is a straight ahead stew served with rice. First off we have to make our adobo.\u00a0 The recipe I found called for four different kinds of dried chilis, but since it didn&#8217;t include arbol chiles, which are the chili most closely associated with Jalisco, I added some of those too.\u00a0 Why not?<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260122_152435.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2805\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260122_152435.jpg\" alt=\"\" width=\"909\" height=\"571\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260122_152435.jpg 909w, https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260122_152435-300x188.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260122_152435-768x482.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260122_152435-478x300.jpg 478w\" sizes=\"auto, (max-width: 909px) 100vw, 909px\" \/><\/a>Upper left is cascabel, and then from left to right we have arbol, morita, guajilo, and ancho chiles.\u00a0 The preparation of all these darlings is less complicated than for Oaxaca.\u00a0 Each one gets toasted for about two minutes in a dry pan, and then they&#8217;re boiled together in a pot with some garlic for about ten minutes.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260122_153809.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2806\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260122_153809.jpg\" alt=\"\" width=\"1024\" height=\"768\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260122_153809.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260122_153809-300x225.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260122_153809-768x576.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260122_153809-400x300.jpg 400w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>At this point, the apartment is ALREADY starting to smell pretty darn good.\u00a0 Into the blender goes the whole pot, along with some seasonings like cumin and oregano.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260122_155332.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2807\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260122_155332.jpg\" alt=\"\" width=\"1024\" height=\"768\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260122_155332.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260122_155332-300x225.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260122_155332-768x576.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260122_155332-400x300.jpg 400w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>Birria is traditionally made with goat or lamb, but any meat that needs long cooking will work well.\u00a0 (Dover sole birria is not a good idea.)\u00a0 We went with lamb, so the next step was to just mix up the lamb and the adobo and shove the whole thing in the fridge for 24 hours to marinate.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260122_165650.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2808\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260122_165650.jpg\" alt=\"\" width=\"1024\" height=\"768\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260122_165650.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260122_165650-300x225.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260122_165650-768x576.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260122_165650-400x300.jpg 400w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>After a day, this pan gets tightly covered with foil, and then goes in to roast for 3 hours.\u00a0 And if we though our apartment smelled good when we were just toasting the chiles&#8230; alcohol that&#8217;s been around for so long that it&#8217;s clearly either amazing or disastrous, but you don&#8217;t know which until you open the bottle and collapse the wavefunction.\u00a0 Research indicates that this particular tequila maker was good and then bad, and is now possibly good again, but this bottle was likely from right before good turned to bad the first time.<\/p>\n<p>I dunno &#8211; it tasted pretty good to me.\u00a0 Lots of vanilla and oak.<\/p>\n<p>Leigh was driven home by a work colleague who had car trouble when she got here, so we had a third for dinner. That&#8217;s good for US, in that we love company, but bad for YOU, because when we have company, I always forget to take as many pictures as I should.<\/p>\n<p>So here&#8217;s our &#8220;completed meal&#8221; photo, with perhaps less of the stew left than would have made for a better shot.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260123_181806.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2811\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260123_181806.jpg\" alt=\"\" width=\"959\" height=\"655\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260123_181806.jpg 959w, https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260123_181806-300x205.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260123_181806-768x525.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260123_181806-439x300.jpg 439w\" sizes=\"auto, (max-width: 959px) 100vw, 959px\" \/><\/a><\/p>\n<p>But I do. not. care. what the pictures looked like, because dear god &#8211; this was a meal to die for.\u00a0 We have a big bag of chiles in the pantry now, and we WILL be making this again. Smoky, spicy, and delicious.<\/p>\n<p>We also made a relatively modern dessert (from the &#8217;90s or so) which also has its origins in Jalisco,\u00a0<em>Bionicos.<\/em><\/p>\n<p>Bionicos is not complicated &#8211; it&#8217;s a mix of fruit chopped into relatively small pieces, and doused in a sauce made of condensed milk, sour cream, and sometimes yogurt.\u00a0 This is then covered with crunchy bits like coconut, granola, and nuts. We decided to go with a mix of mango, pineapple, strawberry, and papaya.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260124_195305.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2812\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260124_195305.jpg\" alt=\"\" width=\"1024\" height=\"768\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260124_195305.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260124_195305-300x225.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260124_195305-768x576.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2026\/01\/20260124_195305-400x300.jpg 400w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>What&#8217;s not to like here? ABSOLUTELY NOTHING, that&#8217;s what.<\/p>\n<p>This meal was absolutely stonkers.<\/p>\n<p>Next up, el norte.\u00a0 After all, lots of planets have an el norte.
