{"id":2776,"date":"2025-12-25T21:46:51","date_gmt":"2025-12-26T05:46:51","guid":{"rendered":"https:\/\/fnerk.com\/?p=2776"},"modified":"2025-12-27T22:12:54","modified_gmt":"2025-12-28T06:12:54","slug":"international-meals-mauritius","status":"publish","type":"post","link":"https:\/\/fnerk.com\/?p=2776","title":{"rendered":"International Meals &#8211; Mauritius"},"content":{"rendered":"<p>When I was in grad school&#8230;<\/p>\n<p>No not for the Physics degree, before that.<\/p>\n<p>No not the previous one either, the one before THAT.<\/p>\n<p>Dear lord, I&#8217;ve spent way too much time in college.<\/p>\n<p>At any rate, ONE of the times I was in grad school, I had a fellow member of my cohort who was from Mauritius.\u00a0 She said that she used to have trouble at immigration control, because the country was so tiny that it sometimes didn&#8217;t appear on their list.<\/p>\n<p>&#8220;I&#8217;m from Mauritius.&#8221;<\/p>\n<p>&#8220;Mauritania?&#8221;<\/p>\n<p>&#8220;No, Mauritius?&#8221;<\/p>\n<p>&#8220;You&#8217;re from Mauritania?&#8221;<\/p>\n<p>&#8230;sigh &#8220;Yes, I&#8217;m from Mauritania.&#8221;<\/p>\n<p>&#8220;C&#8217;mon in!&#8221;<\/p>\n<p>This was obviously a different time.<\/p>\n<p>Speaking of different times, at different times, Mauritius was occupied by the Dutch, the French, the British, and was visited by the Arabs and Portuguese.\u00a0 There&#8217;s no evidence Zheng He ever went there, but sure, why not &#8211; let&#8217;s say he did too.<\/p>\n<p>Suffice it to say, the food culture of this island is quite diverse.\u00a0 In terms of the national dish, the one that comes up the most often as a candidate is a lentil filled flatbread called\u00a0<em>dhol puri.<\/em> And since flatbread by itself is kinda boring, we&#8217;re going to make another dish called sausage rougaille.\u00a0 Rougaille is a tomato based sauce that is quite common on Mauritius, and putting sausage in it is a good way to get some protein in there.<\/p>\n<p>I found a website which appears to be written by an expat, so we&#8217;ll go with her recipes.<\/p>\n<p>First, the flatbread.\u00a0 You take channa dal (split yellow lentils) and boil them.\u00a0 How long?<\/p>\n<p>&#8220;Until mushy&#8221;.<\/p>\n<p>Oh dear &#8211; it&#8217;s THAT kind of recipe is it?\u00a0 Ugh. Fine. How about an hour?\u00a0 That seemed to work.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_155225.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2777\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_155225.jpg\" alt=\"\" width=\"1024\" height=\"768\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_155225.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_155225-300x225.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_155225-768x576.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_155225-400x300.jpg 400w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>Once the peas are properly mushy, you blend them with some tumeric, salt, and cumin seeds to make a paste.<\/p>\n<p>You also make a basic flour and water dough and leave that to rest a bit. But the interesting thing there is that you use the bean water to mix with the flour.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_170851.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2778\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_170851.jpg\" alt=\"\" width=\"1024\" height=\"768\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_170851.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_170851-300x225.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_170851-768x576.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_170851-400x300.jpg 400w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><br \/>\nOnce the dough&#8217;s had a chance to rest, you fill it with the chick pea mixture.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_191153-rotated.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone  wp-image-2779\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_191153-rotated.jpg\" alt=\"\" width=\"387\" height=\"513\" \/><\/a><\/p>\n<p>That gets sealed into balls, and those are rolled super thin for cooking.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_191420-rotated.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone  wp-image-2780\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_191420-rotated.jpg\" alt=\"\" width=\"331\" height=\"439\" \/><\/a><br \/>\nCooking couldn&#8217;t be simpler &#8211; just grill on both sides for a few minutes each.\u00a0 One thing the video I watched stressed, however, is that every time you flip one of these things over, you should brush it with a little oil.\u00a0 I suspect a lot of the flatbreads we made for our Indian meal would have gone better if I had heeded this instruction &#8211; it really did make a difference in keeping them soft.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_195059.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2781\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_195059.jpg\" alt=\"\" width=\"1024\" height=\"768\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_195059.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_195059-300x225.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_195059-768x576.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_195059-400x300.jpg 400w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>OK, what shall we eat WITH these breads?\u00a0 Rougaille turns out to be fairly straightforward.\u00a0 First you sweat some onions with thyme, coriander seed, curry leaves, ginger and garlic pastes, and&#8230; peppercones?<\/p>\n<p>You know what, my French isn&#8217;t any better.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_192924.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2782\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_192924.jpg\" alt=\"\" width=\"1024\" height=\"768\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_192924.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_192924-300x225.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_192924-768x576.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_192924-400x300.jpg 400w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><br \/>\nThis actually smelled pretty amazing all by itself.<\/p>\n<p>To this, you add tomato puree and diced tomatoes.\u00a0 The recipe actually called for a specific brand of tomato puree, but we definitely don&#8217;t have that one at our local Save On.\u00a0 So I just pureed a can of basic &#8220;diced, no extra salt.&#8221;<\/p>\n<p>And in it all went to simmer down.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_193520.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2783\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_193520.jpg\" alt=\"\" width=\"1024\" height=\"768\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_193520.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_193520-300x225.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_193520-768x576.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_193520-400x300.jpg 400w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>Speaking of specific brands, I DEFINITELY didn&#8217;t have the specific brand of honey chicken sausages the author was asking for, so I just got some bog standard mechanically separated chicken wieners.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_193831.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2784\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_193831.jpg\" alt=\"\" width=\"1024\" height=\"768\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_193831.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_193831-300x225.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_193831-768x576.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_193831-400x300.jpg 400w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>I shouldn&#8217;t be so dismissive &#8211; these things smelled pretty good while they were being browned.\u00a0 A little color imparted, they were chopped into short segments and chucked into the tomato sauce to finish cooking, and that was the dish!<\/p>\n<p>Here&#8217;s the whole meal, with some white rice to fill it out.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_201601.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2785\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_201601.jpg\" alt=\"\" width=\"1024\" height=\"768\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_201601.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_201601-300x225.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_201601-768x576.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_201601-400x300.jpg 400w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>This is one of those things where showing everything separate isn&#8217;t really an honest picture of what the meal is like.\u00a0 Here&#8217;s a better idea:<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_201941.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2786\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_201941.jpg\" alt=\"\" width=\"1024\" height=\"768\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_201941.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_201941-300x225.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_201941-768x576.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251225_201941-400x300.jpg 400w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>That looks more like a nice tasty home cooked meal.\u00a0 And it was!<\/p>\n<p>The tomato sauce, in particular, was REALY good, from all the seasoning.\u00a0 The chicken wieners punched surprisingly above their weight, and the bread had a great texture for scooping it all up.\u00a0 In terms of flavor, the bread was a bit dull, but it&#8217;s nothing a bit more salt wouldn&#8217;t have probably fixed.<\/p>\n<p>Mauritania, I&#8217;m sorry, Mauritius, really has some tasty food &#8211;
