Cooking Class"},"content":{"rendered":"<p>Chiang Mai is the second largest city in Thailand, but the vibe couldn&#8217;t be more different than downtown Bangkok.\u00a0 It has few to no skyscrapers, no subway system, and the vibe is just generally more laid back.<\/p>\n<p>We stayed near the east gate in the old city wall, and began our explorations in that direction.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_095638.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2684\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_095638.jpg\" alt=\"\" width=\"1024\" height=\"768\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_095638.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_095638-300x225.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_095638-768x576.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_095638-400x300.jpg 400w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>Chiang Mai definitely has a bit of a hipster vibe to it, as evidenced by the fact that there&#8217;s a coffee shop every other storefront.\u00a0 Of course, coming from the Pacific Northwest, we felt right at home.<\/p>\n<p>One thing the PNW\u00a0<em>doesn&#8217;t<\/em> have, however, is locally grown coffee.\u00a0 I had a phenomenal light roast that was closer to fruit juice than the motor oil they serve at Tim Hortons.\u00a0 Even Leigh admitted she didn&#8217;t mind it, which is saying something.<\/p>\n<p>We headed east on a mission to see what we could see, and possibly investigate a few more jewelry stores.<\/p>\n<p>One thing we saw was a Buddhist temple with Donald Duck eating Pad Thai.\u00a0 Yes, really.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_104137-rotated.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone  wp-image-2685\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_104137-rotated.jpg\" alt=\"\" width=\"491\" height=\"651\" \/><\/a><br \/>\nNow, what we would come to discover is that Chiang Mai has a LOT of temples.\u00a0 Like, a LOT a lot.\u00a0 Almost as many as coffee shops, that&#8217;s how many.<\/p>\n<p>But this was still our first day here, so we hadn&#8217;t been overwhelmed by the omnipresent maximalism yet.\u00a0 I mean, just look at the building\u00a0<em>behind\u00a0<\/em>ol&#8217; Donald there.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_104205-rotated.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone  wp-image-2686\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_104205-rotated.jpg\" alt=\"\" width=\"508\" height=\"674\" \/><\/a><\/p>\n<p>Or the one literally across the street.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_111000.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2687\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_111000.jpg\" alt=\"\" width=\"1024\" height=\"768\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_111000.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_111000-300x225.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_111000-768x576.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_111000-400x300.jpg 400w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><br \/>\nOr this one.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_110233.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2688\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_110233.jpg\" alt=\"\" width=\"1024\" height=\"768\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_110233.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_110233-300x225.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_110233-768x576.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_110233-400x300.jpg 400w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><br \/>\nThis is all just stuff we saw on the first morning within a one block radius of each other.<\/p>\n<p>The amount of sheer unabashed ornamentation per square block in Chiang Mai is absolutely\u00a0<em>unreal.<\/em> I expect as one gets farther from the old quarter it settles down a bit, but I&#8217;m not certain of that fact.<\/p>\n<p>But all this opulence had helped us work up and appetite, and we discovered that one of the restaurants that we had tagged in advance was handy, and just opening up for lunch.<\/p>\n<p>That would be Maadae Slow Fish Kitchen, which we can toss on the pile of &#8220;absurdly cheap Michelin recommended restaurants&#8221; we encountered this trip.\u00a0 We had a spicy pomelo and fish salad, and mussels.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_114807.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2689\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_114807.jpg\" alt=\"\" width=\"1024\" height=\"768\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_114807.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_114807-300x225.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_114807-768x576.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_114807-400x300.jpg 400w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a> <a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/2025-11-28-11.41.48.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-large wp-image-2690\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/2025-11-28-11.41.48.jpg\" alt=\"\" width=\"584\" height=\"776\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/2025-11-28-11.41.48.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/2025-11-28-11.41.48-226x300.jpg 226w\" sizes=\"auto, (max-width: 584px) 100vw, 584px\" \/><\/a><br \/>\nBoth were amazing, but Leigh puts the mussels in her top three dishes for the trip, which, for\u00a0<em>this<\/em> trip, is\u00a0<em>really\u00a0<\/em>saying something.<\/p>\n<p>Continuing our random stroll eastward, we came unexpectedly upon &#8220;The Museum of Broken Relationships.&#8221;\u00a0 I am not making this up.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/2025-11-28-12.54.16.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone  wp-image-2691\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/2025-11-28-12.54.16.jpg\" alt=\"\" width=\"340\" height=\"449\" \/><\/a><br \/>\nThis was a two story museum housing a few dozen relatively ordinary objects.\u00a0 A doll.\u00a0 A pair of shoes.\u00a0 A watch.<\/p>\n<p>But the card on the wall next to each one, rather than being any information about the object itself, was a personal story from the owner of the object.\u00a0 And the stories were universally about relationships that had been broken, either due to infidelity, growing apart, death, illness, or other causes.\u00a0 Some of the stories were funny, some were touching, and\u00a0<em>all<\/em> of them were intensely personal.<\/p>\n<p>It was a lot.<\/p>\n<p>How about a donut shaped like a frog?<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_133822-rotated.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone  wp-image-2693\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_133822-rotated.jpg\" alt=\"\" width=\"369\" height=\"489\" \/><\/a><\/p>\n<p>Whew.\u00a0 That&#8217;s better.\u00a0 Except that this angle makes me look like I have six chins.\u00a0 Well, after the amount we ate, that&#8217;s not outside the realm of possibility.<\/p>\n<p>Oh, and the donut came with a delicious pandan custard to dip it in.<\/p>\n<p>We spent the rest of the afternoon bonking around markets, jewelry shops, a chocolate shop, and a few more temples. Also whatever the hell this was.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_141744.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2694\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_141744.jpg\" alt=\"\" width=\"1024\" height=\"768\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_141744.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_141744-300x225.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_141744-768x576.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_141744-400x300.jpg 400w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>But &#8211;\u00a0 we had to get back to our hotel, because we were being picked up for our second cooking class of the trip.\u00a0 (And the first one we actually planned in advance.)<\/p>\n<p>Unlike the cooking class in Ao Nang, which was a last minute schedule improvisation, this one we carefully researched in advance.\u00a0 It would be a private cooking class &#8211; just us and the chef (and as it turns out, several members of her family) &#8211; and it would be focused primarily on northern Thai food.<\/p>\n<p>We were contacted ahead of time to select the four dishes we wanted to try, and apparently our selections made an impression on our host, as she said she was pleasantly surprised to see that we didn&#8217;t have a pad Thai or a basil stir fry on the list. (Not that there&#8217;s anything WRONG with those dishes, but we wanted something a bit more specific to the region.)<\/p>\n<p>We were picked up at our hotel by a nice woman driving a songthaew who turned out to be the sister of the chef.\u00a0 She drove us to a market well south of downtown.\u00a0 This was already a nice change &#8211; unlike the group classes being herded around the touristy markets, Benny (our host) met us and took just the two of us around a market clearly\u00a0<em>only<\/em> populated by locals.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/2025-11-28-18.02.42.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2695\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/2025-11-28-18.02.42.jpg\" alt=\"\" width=\"1020\" height=\"768\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/2025-11-28-18.02.42.jpg 1020w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/2025-11-28-18.02.42-300x226.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/2025-11-28-18.02.42-768x578.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/2025-11-28-18.02.42-398x300.jpg 398w\" sizes=\"auto, (max-width: 1020px) 100vw, 1020px\" \/><\/a><\/p>\n<p>After a few tasty, tasty samples, we made our way back to Benny&#8217;s mom&#8217;s house to start cooking.\u00a0 We had chosen four dishes with some overlap in their base curry pastes.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_184947.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2696\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_184947.jpg\" alt=\"\" width=\"1024\" height=\"768\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_184947.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_184947-300x225.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_184947-768x576.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_184947-400x300.jpg 400w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><br \/>\nBut some differences, too.\u00a0 The first one includes an ingredient I don&#8217;t know if I&#8217;ll be able to find, even in Vancouver &#8211; Thai prickly ash, or <em>Makhwaen.\u00a0<\/em>The third one has compressed, fermented, soybean.\u00a0 There were some other differences too.\u00a0 But we pounded them all to a pulp anyway.<\/p>\n<p>By the way, this is Benny.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/2025-11-28-19.10.18.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone  wp-image-2697\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/2025-11-28-19.10.18.jpg\" alt=\"\" width=\"487\" height=\"643\" \/><\/a><\/p>\n<p>As soon as we started ingredient prep we hit one <em>sure<\/em> sign this was a much more serious cooking class than the one in Ao Nang:<\/p>\n<p>The knives were sharp.<\/p>\n<p>The entire experience was delightful.\u00a0 Benny kept up a running conversation about the food we were making, the background, how it related to her own family, and how it was different from central and southern Thai food.\u00a0 Benny&#8217;s partner and sisters were on hand to help out and also make conversation as well.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_195407-rotated.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone  wp-image-2698\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_195407-rotated.jpg\" alt=\"\" width=\"427\" height=\"566\" \/><\/a><\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/2025-11-28-19.49.23.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2699\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/2025-11-28-19.49.23.jpg\" alt=\"\" width=\"768\" height=\"1020\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/2025-11-28-19.49.23.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/2025-11-28-19.49.23-226x300.jpg 226w\" sizes=\"auto, (max-width: 768px) 100vw, 768px\" \/><\/a><\/p>\n<p>And here was our final spread.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_203749.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-2700\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_203749.jpg\" alt=\"\" width=\"1024\" height=\"768\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_203749.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_203749-300x225.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_203749-768x576.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/12\/20251128_203749-400x300.jpg 400w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><br \/>\nThe dishes were a spicy northern style Laab, a pounded jackfruit salad (Tam Kanoon), a tomato, pork, and chili dip (Nam Prik Ong), and an herbal pork curry soup (Gaeng Om).
