{"id":2130,"date":"2025-05-04T21:26:29","date_gmt":"2025-05-05T04:26:29","guid":{"rendered":"https:\/\/fnerk.com\/?p=2130"},"modified":"2025-05-08T21:51:27","modified_gmt":"2025-05-09T04:51:27","slug":"international-meals-malawi","status":"publish","type":"post","link":"https:\/\/fnerk.com\/?p=2130","title":{"rendered":"International Meals &#8211; Malawi"},"content":{"rendered":"<p>Whenever we discover that there&#8217;s some food item that is regarded as quinessentially associated with a country, we prick up our ears a bit.\u00a0 It&#8217;s often so challenging to distinguish neighbors, that anything that is definitely from our target country is welcome news.<\/p>\n<p>In this case, we discovered that there is a hot sauce that is made in Malawi, associated with Malawi, and eagerly sought by Malawian expatriates. It also costs three times as much for shipping as it does for the actual bottle.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/05\/20250504_183850.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone  wp-image-2132\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/05\/20250504_183850.jpg\" alt=\"Nali sauce\" width=\"338\" height=\"448\" \/><\/a><br \/>\nIt is called Nali sauce, and friends &#8211; that label is not joking. The ingredients here are birds eye chilis, paprika, onions, and vinegar.<\/p>\n<p>That&#8217;s OK, we like spicy.<\/p>\n<p>So that&#8217;s Malawi sorted.<\/p>\n<p>Wait a moment &#8211; don&#8217;t we need some sort of\u00a0<em>recipe<\/em> to go with this?\u00a0 As much fun as doing Nali shots sounds, shouldn&#8217;t we make some actual, you know, food?<\/p>\n<p>And there we ran into difficulty. If I asked you to name a quinessential BRITISH sauce, you&#8217;d probably say &#8220;HP Sauce.&#8221;\u00a0 Or else &#8220;Please go away and stop asking me questions about condiments.&#8221;\u00a0 But either way &#8211; a sauce is not a recipe, and while HP is a classic UK <em>sauce<\/em>, that doesn&#8217;t mean you&#8217;d necessarily use it to make Boopers and Sploot, or whatever the hell the national dish is. (We don&#8217;t do research more than one country ahead.)<\/p>\n<p>So returning to our old friends at United Noshes, (And by friends, I mean &#8220;people who have no idea we exist&#8221;) we discover that a common use for this stuff is on&#8230; fish and chips.\u00a0 OK, we can do that.\u00a0 Or rather, we can fry some fish and go pick up some french fries from our friendly neighborhood restaurant with a deep fryer.<\/p>\n<p>I made a simple batter of flour and egg, which completely failed to adhere to the tilapia we selected.\u00a0 The cooked fish was still good, but was completely uncoated.\u00a0 The other topping in addition to Nali sauce was shredded cabbage soaked in vinegar.<\/p>\n<p>In addition to that, let&#8217;s make the ACTUAL national dish of Malawi, which is another variant on a simple starch paste.\u00a0 This one is called\u00a0<em>Nsima,\u00a0<\/em>and is made with fine corn flour, such as is used to make tortillas.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/05\/20250504_184328.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone  wp-image-2133\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/05\/20250504_184328.jpg\" alt=\"Corn flour\" width=\"359\" height=\"397\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/05\/20250504_184328.jpg 694w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/05\/20250504_184328-271x300.jpg 271w\" sizes=\"auto, (max-width: 359px) 100vw, 359px\" \/><\/a><\/p>\n<p>Flour, water, heat, stir.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/05\/20250504_184928.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone  wp-image-2134\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/05\/20250504_184928.jpg\" alt=\"Ndima\" width=\"363\" height=\"379\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2025\/05\/20250504_184928.jpg 736w, https:\/\/fnerk.com\/wp-content\/uploads\/2025\/05\/20250504_184928-288x300.jpg 288w\" sizes=\"auto, (max-width: 363px) 100vw, 363px\" \/><\/a><\/p>\n<p>I don&#8217;t mean to be dismissive &#8211; this actually turned out to be one of the tastier ones we&#8217;ve made, and we have no idea why.
