{"id":1944,"date":"2024-04-13T21:54:52","date_gmt":"2024-04-14T04:54:52","guid":{"rendered":"https:\/\/fnerk.com\/?p=1944"},"modified":"2024-04-16T22:53:07","modified_gmt":"2024-04-17T05:53:07","slug":"international-meals-kuwait","status":"publish","type":"post","link":"https:\/\/fnerk.com\/?p=1944","title":{"rendered":"International Meals &#8211; Kuwait"},"content":{"rendered":"<p>We return to somewhat less shaky alphabetical ground with Kuwait.\u00a0 Best known in the US as the country whose invasion by Iraq in 1990 precipitated the first Gulf War, Kuwait has a long and complicated history as a part of a number of empires, including the Greeks, the Persians, the Ottomans, and the British.\u00a0 It gained independence in the 1960s, and for a time was the biggest oil exporter in the region, despite its small size.<\/p>\n<p>The national dish of Kuwait is\u00a0<em>machboos,<\/em> a dish consisting of spiced chicken or lamb, rice cooked in the meat stock, and a middle layer consisting of split peas, raisins, and onions.\u00a0 We&#8217;re going to use the recipe published on &#8220;United Noshes&#8221; from someone named &#8220;Al.&#8221;\u00a0 That&#8217;s capital A lowercase &#8220;ell&#8221;.\u00a0 The recipe was NOT produced by AI, as far as we know.<\/p>\n<p>To start, I had to do something EXTREMELY unusual, that has not come up a single time on this blog so far.<\/p>\n<p>No, just kidding &#8211; I had to chop up an onion.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2024\/04\/20240413_161340.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1945\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2024\/04\/20240413_161340.jpg\" alt=\"Onion\" width=\"437\" height=\"330\" \/><\/a><\/p>\n<p>The other major bit of prep work before we could attack the chicken was to make a spice blend called <em>bezar.\u00a0\u00a0<\/em>This involved toasting a number of different spices one at a time, since they all have different cooking times, then blending them in a grinder.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2024\/04\/20240413_150526.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1948\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2024\/04\/20240413_150526.jpg\" alt=\"Toasted spices\" width=\"307\" height=\"232\" \/><\/a><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2024\/04\/20240413_162639.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1949\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2024\/04\/20240413_162639.jpg\" alt=\"Ground Spices\" width=\"306\" height=\"231\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2024\/04\/20240413_162639.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2024\/04\/20240413_162639-300x225.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2024\/04\/20240413_162639-768x576.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2024\/04\/20240413_162639-400x300.jpg 400w\" sizes=\"auto, (max-width: 306px) 100vw, 306px\" \/><\/a><br \/>\nWe don&#8217;t mind making our own spice blends, because toasting spices always makes the kitchen smell AMAZING.<\/p>\n<p>One of the things that makes this dish complicated is that the chicken is cooked four different ways &#8211; it is poached, then seared, then braised, then baked.\u00a0 To start with, the chicken is poached <s>from the King&#8217;s forest<\/s> in boiling water for ten minutes to start the cooking process, but also to flavor the cooking water into a stock.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2024\/04\/20240413_162932.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1946\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2024\/04\/20240413_162932.jpg\" alt=\"Poached chicken\" width=\"444\" height=\"438\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2024\/04\/20240413_162932.jpg 576w, https:\/\/fnerk.com\/wp-content\/uploads\/2024\/04\/20240413_162932-300x296.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2024\/04\/20240413_162932-304x300.jpg 304w\" sizes=\"auto, (max-width: 444px) 100vw, 444px\" \/><\/a><\/p>\n<p>Next up, we fry the aforementioned onions with some garlic.\u00a0 Once they&#8217;ve softened a bit, the chicken goes in to get a bit of color on it.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2024\/04\/20240413_164249.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1947\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2024\/04\/20240413_164249.jpg\" alt=\"Chicken frying\" width=\"419\" height=\"317\" \/><\/a><\/p>\n<p>This picture was taken BEFORE said color had started to appear. Once the chicken has a sear on it, you go in with the spices, water, and some tomato paste and let it braise.\u00a0 And here we confront the fact that this is a &#8220;someone&#8217;s dad named Al&#8221; recipe, because we have directions like &#8220;cook until the chicken is soft and the sauce tastes amazing.&#8221;\u00a0 Thanks, Al.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2024\/04\/20240413_165939.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1950\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2024\/04\/20240413_165939.jpg\" alt=\"Chicken braising\" width=\"471\" height=\"576\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2024\/04\/20240413_165939.jpg 471w, https:\/\/fnerk.com\/wp-content\/uploads\/2024\/04\/20240413_165939-245x300.jpg 245w\" sizes=\"auto, (max-width: 471px) 100vw, 471px\" \/><\/a><br \/>\nThe rear pot is the dried yellow split peas getting underway in some boiling water. Once they&#8217;re tender, you cook some more onions, then mix them with the peas and the raisins and simmer some more.<\/p>\n<p>But wait, we also need rice.\u00a0 As per usual on this blog, we refuse to cook rice using any method OTHER than a rice cooker unless it&#8217;s absolutely necessary.\u00a0 And it wasn&#8217;t in this case &#8211; the recipe explicitly contemplated using one.\u00a0 The only distinctive feature here is that the rice is cooked in the chicken stock we made while we were poaching the chicken.<\/p>\n<p>Finally, the braised chicken gets sprinkled with cinnamon and put in a pan to roast &#8220;until the smell is unbearable.&#8221;<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2024\/04\/20240413_173212.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1951\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2024\/04\/20240413_173212.jpg\" alt=\"Chicken ready to bake.\" width=\"345\" height=\"458\" \/><\/a><br \/>\nThis is the part where I suspect Al&#8217;s recollections leave something to be desired &#8211; we&#8217;re putting chicken in a hot oven with no liquid and no covering. Won&#8217;t this dry things out?<\/p>\n<p>Well, as it turns out, yes, it does a bit.\u00a0 In hindsight, I should have listened to my suspicion and looked at a few more recipes, which would have indicated to COVER the chicken, and possibly pour some oil over the chicken to keep it moist.<\/p>\n<p>The recipe didn&#8217;t SAY to reduce the tomato sauce after braising the chicken, but it was a bit thin, so we left it on the heat while we took care of everything else. But I was able to locate one of the MOST popular drinks in the country.\u00a0 I found it at a store called (checks notes) &#8220;Celtic Treasure Chest.&#8221;\u00a0 Wait, what?<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2024\/04\/20240413_181748.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1954\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2024\/04\/20240413_181748.jpg\" alt=\"Vimto\" width=\"182\" height=\"282\" \/><\/a><br \/>\nApparently the frequent drink of choice in this middle eastern country is a blackcurrant\u00a0 soda from Manchester.\u00a0 I blame colonialism.\u00a0 It&#8217;s usually safe to blame colonialism.<\/p>\n<p>To finish the meal, we made a ring cake called\u00a0<em>Gers Ogili,\u00a0<\/em>Gers apparently just means &#8220;circle,&#8221; so this is the circle of Ogili.\u00a0 It&#8217;s a fairly dense cake that uses rather a LOT of saffron, giving it an intense yellow color.<\/p>\n<p>You whip eggs and sugar together in one bowl, put your dry ingredients in a second, and your wet ingredients in a third.
