{"id":1555,"date":"2023-04-28T20:16:28","date_gmt":"2023-04-29T03:16:28","guid":{"rendered":"https:\/\/fnerk.com\/?p=1555"},"modified":"2023-05-04T20:40:32","modified_gmt":"2023-05-05T03:40:32","slug":"international-meals-italy-part-3-sicily","status":"publish","type":"post","link":"https:\/\/fnerk.com\/?p=1555","title":{"rendered":"International Meals &#8211; Italy, Part 3: Sicily"},"content":{"rendered":"<p>This meal seemed to be cursed.<\/p>\n<p>We decided to celebrate the land of approximately 25% of my ancestors with a dish called\u00a0<em>Pasta con le Sarde<\/em>, or &#8220;Pasta With Sardines.&#8221; So naturally, we needed to acquire some sardines.<\/p>\n<p>The FIRST time I went to get sardines, my car battery died.\u00a0 So not only did I not get sardines, I also missed a brass band rehearsal, and eventually had to pay a LUDICROUS amount of money to have the thing replaced.\u00a0 Thanks, supply chain!<\/p>\n<p>Take 2: Got in my car several weeks later to drive to Granville Island.\u00a0 Car started right up, got to the fish counter, and found out that fresh sardines are no longer a thing in Vancouver.\u00a0 Something about currents.\u00a0 The curse then kicked up to high gear when I LEFT Granville Island, and discovered that a race course had been set up such that I couldn&#8217;t get back within half a mile of our apartment. I had to park a long way off, go get my horn, walk back to the car before my parking ran out (in the pouring rain, of course) and go sit in a library for the next two hours.<\/p>\n<p>On the other hand, if I HADN&#8217;T gone to fail to get fish, I would have been trapped INSIDE the race route, so that&#8217;s something, I guess.<\/p>\n<p>Sooo&#8230;. canned it is, I guess. In addition to those, onion and fennel fronds on the cutting board, and the aforementioned raisins and breadcrumbs up top, you can also see the jar of anchovies from last week coming back out for another appearance, and the chopped fennel BULB at upper right.<\/p>\n<p>Everything ready, it&#8217;s time to start cooking. You start by softening up the onion and fennel, then you add in the anchovies.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2023\/05\/20230428_194101-rotated.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1560\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2023\/05\/20230428_194101-rotated.jpg\" alt=\"Onions, fennel, and anchovies\" width=\"768\" height=\"432\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2023\/05\/20230428_194101-rotated.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2023\/05\/20230428_194101-300x169.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2023\/05\/20230428_194101-500x281.jpg 500w\" sizes=\"auto, (max-width: 768px) 100vw, 768px\" \/>\u00a0<\/a><br \/>\nThis gets cooked until the anchovies have basically completely dissolved into the oil, which is kind of amazing.\u00a0 Next up, in with the raisins and wine, which get cooked until they reduce away.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2023\/05\/20230428_194137.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone  wp-image-1561\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2023\/05\/20230428_194137.jpg\" alt=\"Raisins going into the sauce\" width=\"490\" height=\"368\" \/><\/a><br \/>\nFinally, in go the sardines and pine nuts.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2023\/05\/20230428_194600.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1562\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2023\/05\/20230428_194600.jpg\" alt=\"\" width=\"862\" height=\"549\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2023\/05\/20230428_194600.jpg 862w, https:\/\/fnerk.com\/wp-content\/uploads\/2023\/05\/20230428_194600-300x191.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2023\/05\/20230428_194600-768x489.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2023\/05\/20230428_194600-471x300.jpg 471w\" sizes=\"auto, (max-width: 862px) 100vw, 862px\" \/><\/a><br \/>\nMeanwhile, the pasta gets cooked separately until just this side of done, and finally everything gets tossed together with a little bit of pasta water.<\/p>\n<p>It&#8217;s not actually all that complicated a dish.\u00a0 Did I mention we did this one on a weeknight?<\/p>\n<p>The breadcrumbs go on at the end when the dish is served, along with the fennel fronds.\u00a0 And here it is!<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2023\/05\/20230428_195341.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1563\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2023\/05\/20230428_195341.jpg\" alt=\"Sicilian Pasta\" width=\"1024\" height=\"576\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2023\/05\/20230428_195341.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2023\/05\/20230428_195341-300x169.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2023\/05\/20230428_195341-768x432.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2023\/05\/20230428_195341-500x281.jpg 500w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a>Not my best food porn, which is a shame, because this was actually delicious.\u00a0 The sweet raisins, salty anchovies, toasty pine nuts and bread crumbs, fishy sardines, and pungent fennel, all combined to make something that really felt of a place &#8211; there wasn&#8217;t any question of &#8220;isn&#8217;t this the same as what you can get across the border in the next country over?&#8221;<\/p>\n<p>It was also delicious.\u00a0 If I ever spot fresh sardines on a counter, I&#8217;ll snap them up so we can try this again with the not canned kind.<\/p>\n<p>And after a solid year&#8230; that&#8217;s the &#8220;I&#8221;s done!\u00a0 It&#8217;s been a long trip.\u00a0 Next up, Jamaica!<\/p>\n<p>Recipe:<br \/>\n<a href=\"https:\/\/www.seriouseats.com\/pasta-pasta-con-le-sarde-sicilian-pasta-with-sardines\">Pasta con le Sarde<\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>This meal seemed to be cursed.
