{"id":1516,"date":"2023-03-05T21:23:59","date_gmt":"2023-03-06T05:23:59","guid":{"rendered":"https:\/\/fnerk.com\/?p=1516"},"modified":"2023-03-10T22:08:41","modified_gmt":"2023-03-11T06:08:41","slug":"international-meals-israel","status":"publish","type":"post","link":"https:\/\/fnerk.com\/?p=1516","title":{"rendered":"International Meals &#8211; Israel"},"content":{"rendered":"<p>Israeli cuisine is a bit of a difficult subject.\u00a0 The sovereign state of Israel as it exists today was only established in 1948.\u00a0 But the area has been continuously inhabited for just about as long as we have evidence that humans have existed at all.<\/p>\n<p>So what IS Israeli food?\u00a0 Is it the food of the region in general? Israel has a <a href=\"https:\/\/www.saveur.com\/hummus-wars-middle-eastern-lebanon-israel\/\">simmering argument<\/a> with Lebanon over who can lay claim to hummus. The argument, is of course, nonsense &#8211; hummus is substantially older than either Israel or Lebanon, and is ubiquitous throughout the middle east.<\/p>\n<p>Is Israeli food the food of the diaspora, brought back to the region by returning Jews?\u00a0 Should we perhaps focus on the food of modern Israeli chefs like Eyal Shani, whose <a href=\"https:\/\/www.luxsphere.co\/eyal-shani-roasted-cauliflower-recipe\/\">whole roasted cauliflower<\/a> can be found all over the internet?<\/p>\n<p>In the end, we decided these questions are above our pay grade, tried to pick a few recipes that we believe would be reasonably typical in a modern Israeli household, and got on with it.<\/p>\n<p>We ARE making hummus, but from a recipe which claims to be &#8220;Israeli style.&#8221;\u00a0 This is another somewhat dubious claim, since there&#8217;s not actually a lot to vary here.\u00a0 The basic ingredients of hummus everywhere are chickpeas (soaked and cooked), lemon juice, salt, and tahini. This version also includes quite a bit of garlic, which is not at all unusual.<\/p>\n<p>A word about tahini, however.\u00a0 Tahini has only one ingredient &#8211; sesame seeds.\u00a0 In principle, we could have made it from scratch, but we decided to just get a jar of ground up sesame seeds.\u00a0 At which point it occurred to me &#8211; I already HAD a jar of ground up sesame seeds.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2023\/03\/20230305_172455.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone  wp-image-1518\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2023\/03\/20230305_172455.jpg\" alt=\"Jars of sesame paste\" width=\"460\" height=\"263\" \/><\/a><\/p>\n<p>Did I really need to buy the one on the left?\u00a0 As it turns out, yes.\u00a0 While both jars contain nothing but ground sesame, the one on the right contains ground TOASTED sesame, which has a slightly different flavor profile. Hummus.\u00a0 For our main dish, we&#8217;re making a lamb kebab with a tahini sauce.\u00a0 Let&#8217;s see what the ingredients for this sauce are.<\/p>\n<p>Lemon juice, tahini, garlic, salt&#8230;.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2023\/03\/20230305_173425.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1519 size-full\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2023\/03\/20230305_173425.jpg\" alt=\"Tahini sauce\" width=\"1024\" height=\"576\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2023\/03\/20230305_173425.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2023\/03\/20230305_173425-300x169.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2023\/03\/20230305_173425-768x432.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2023\/03\/20230305_173425-500x281.jpg 500w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>&#8230;.waaaait a minute.\u00a0 This sauce is just hummus without the chickpeas.\u00a0 Oh wait &#8211; it gets some mint and parsley too.\u00a0 Thank goodness.<\/p>\n<p>The actual kebabs are seasoned with mint and parsley as well, in addition to pine nuts which, at the time of this writing, are roughly twice as expensive (by weight) as neodymium.<\/p>\n<p>I am not making this up.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2023\/03\/20230305_174959.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1521 \" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2023\/03\/20230305_174959-e1678513889408.jpg\" alt=\"Kebab mixture.\" width=\"422\" height=\"315\" \/><\/a><br \/>\nWe live in Canada, and it&#8217;s winter, so clearly grilling would be out of the question.<\/p>\n<p>I&#8217;m kidding, of course &#8211; we live in Vancouver, so it was in the 40s F, or&#8230; some other temperature C.\u00a0 Perfectly fine for grilling, anyway.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2023\/03\/20230305_180841.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1522\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2023\/03\/20230305_180841.jpg\" alt=\"Grilling kebabs.\" width=\"1024\" height=\"576\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2023\/03\/20230305_180841.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2023\/03\/20230305_180841-300x169.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2023\/03\/20230305_180841-768x432.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2023\/03\/20230305_180841-500x281.jpg 500w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>For our final dish, we DID make cauliflower, although we decided to eschew the trendy &#8220;whole cauliflower&#8221; thing for a battered and fried version.\u00a0 The cauliflower got a quick blanch in boiling water, and was then put through a rigorous dunk in three separate stations.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2023\/03\/20230305_180230.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1523\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2023\/03\/20230305_180230.jpg\" alt=\"Cauliflower cooking process\" width=\"1024\" height=\"576\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2023\/03\/20230305_180230.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2023\/03\/20230305_180230-300x169.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2023\/03\/20230305_180230-768x432.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2023\/03\/20230305_180230-500x281.jpg 500w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><br \/>\nFirst flour, then egg, and finally breadcrumbs and spices.\u00a0 (&#8220;spices&#8221; in this case means turmeric, chicken bullion powder, and pepper.) These are then fried up in olive oil until crispy and brown.\u00a0 Wouldn&#8217;t want the cauliflower to be HEALTHY, after all.<\/p>\n<p>To accompany the meal, we bought the only Israeli wine (other than Manischewitz) available at our local liquor store.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2023\/03\/20230305_182149.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1524 \" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2023\/03\/20230305_182149-e1678514336223.jpg\" alt=\"Israeli wine\" width=\"270\" height=\"336\" \/><\/a><\/p>\n<p>And here&#8217;s the final spread.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2023\/03\/20230305_182144-e1678514878668.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1525 size-full\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2023\/03\/20230305_182144-e1678514878668.jpg\" alt=\"Israeli Meal\" width=\"806\" height=\"576\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2023\/03\/20230305_182144-e1678514878668.jpg 806w, https:\/\/fnerk.com\/wp-content\/uploads\/2023\/03\/20230305_182144-e1678514878668-300x214.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2023\/03\/20230305_182144-e1678514878668-768x549.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2023\/03\/20230305_182144-e1678514878668-420x300.jpg 420w\" sizes=\"auto, (max-width: 806px) 100vw, 806px\" \/><\/a><br \/>\nFull confession, the pita was also just purchased off the shelf.<\/p>\n<p>And&#8230; it was pretty darn good!\u00a0 The cauliflower, in particular, was excellent &#8211; crunchy on the outside, not too soft in the middle, with a nice bite from the pepper and the bread crumbs.\u00a0 The kebabs were tasty, and hummus is always great.<\/p>\n<p>Was there anything on this table that is uniquely Israeli? Probably not.\u00a0 Is this a meal that would be absolutely normal to see on an Israeli table?\u00a0 Probably.\u00a0 Was it delicious?
