I still haven&#8217;t transferred our pictures for our Bangladeshi meal from Facebook over to this blog, but for that meal we made a spicy fish dish, a red lentil curry, and a rice pulao.<\/p>\n<p>Since I hadn&#8217;t looked this up before I planned this meal, we ended up making a spicy fish dish and a red lentil curry.\u00a0 Welp.\u00a0 The two recipes aren&#8217;t QUITE identical, and they were both tasty, so we&#8217;re cool.\u00a0 Plus, we continued our bread-lentil-main-other pattern here, so there were two other dishes to make.<\/p>\n<p>Let&#8217;s get started!\u00a0 First off, our flatbread.\u00a0 This is the one I&#8217;m least certain about the authenticity.\u00a0 The best known bread from this region is <em>luchi<\/em>, but it&#8217;s deep fried, and we&#8217;re on record as being somewhat deep-fry averse.\u00a0 So instead we found a recipe for a flatbread made with rice flour.\u00a0 The actual method is pretty simple &#8211; first you cook rice flour and water in a pot, then once it&#8217;s cooled, you knead it into a dough.<\/p>\n<p>To my astonishment, this powdery mess:<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_161235.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1402\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_161235.jpg\" alt=\"Cooked rice dough\" width=\"1024\" height=\"576\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_161235.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_161235-300x169.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_161235-768x432.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_161235-500x281.jpg 500w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>did, in fact, come right together into smooth dough balls.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_162507.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1403\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_162507.jpg\" alt=\"\" width=\"1024\" height=\"576\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_162507.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_162507-300x169.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_162507-768x432.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_162507-500x281.jpg 500w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>These then needed to be flattened out as thin as possible, without allowing them to fall apart.\u00a0 While I never got pretty round shapes, I did at least get somewhat better as we went along. we use them all the time for weeknight cooking, because they don&#8217;t need to be soaked, and they come together in a nice thick texture that&#8217;s delicious with rice.<\/p>\n<p>Indian cooking can involve making really complicated spice blends.\u00a0 Toast this, grind that, mix in the other thing, for upwards of as many as twenty ingredients.\u00a0 But for THIS region, the dominant blend is called <em>panch phoran,\u00a0<\/em>and couldn&#8217;t be simper.\u00a0 Take five whole spices, and mix them together without cooking them.\u00a0 The five spices are fenugreek, nigella, cumin seed, mustard seed, and fennel seed.<\/p>\n<p>We have this adorable little container that I just keep refilling as we run out.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_174224.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1406 \" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_174224-e1662658719345.jpg\" alt=\"Panch phoran\" width=\"267\" height=\"285\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_174224-e1662658719345.jpg 336w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_174224-e1662658719345-281x300.jpg 281w\" sizes=\"auto, (max-width: 267px) 100vw, 267px\" \/><\/a><\/p>\n<p>This lentil dish uses the standard process of &#8220;cook lentils in one pot until done, make seasoning in second pot, put seasoning in lentils.&#8221;\u00a0 Seasoning in this case consists of the aforementioned spice blend, along with onions, tomatoes, ginger garlic paste, and chilis.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_182750.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1407\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_182750.jpg\" alt=\"Lentil seasoning\" width=\"1024\" height=\"576\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_182750.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_182750-300x169.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_182750-768x432.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_182750-500x281.jpg 500w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>Finally, let&#8217;s talk fish.\u00a0 There&#8217;s two ingredients that required a little planning here.\u00a0 First is the fish itself.\u00a0\u00a0<em>Rohu<\/em> is a type of carp, which swims around in solid rectangular blocks of ice, and frankly, seems to be trying just a LITTLE hard to ingratiate itself.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220903_191258.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1408\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220903_191258.jpg\" alt=\"Packaged rohu fish.\" width=\"432\" height=\"768\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220903_191258.jpg 432w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220903_191258-169x300.jpg 169w\" sizes=\"auto, (max-width: 432px) 100vw, 432px\" \/><\/a><\/p>\n<p>WE&#8217;LL be the judge of what we like, fish.<\/p>\n<p>The other key ingredient for this dish is mustard oil.\u00a0 Now, while people in Bengal have been cooking with mustard oil for millennia, it contains high levels of erucic acid, which is potentially linked to heart disease when consumed in large quantities.\u00a0 As such, it is illegal to sell it for cooking purposes in the US and Canada.\u00a0 On the other hand, it&#8217;s perfectly legal to sell <em>exactly the same oil<\/em> as hand lotion.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/b9fa4007-cf10-4a1d-aea1-5ceea2030760-scaled.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1409 \" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/b9fa4007-cf10-4a1d-aea1-5ceea2030760-576x1024.jpg\" alt=\"Mustard Oil\" width=\"229\" height=\"399\" \/><\/a><br \/>\n&#8220;External use only.&#8221;\u00a0 Nudge nudge, wink wink.<\/p>\n<p>Figuring that making the occasional dish with this stuff will likely not kill us, we decided to go ahead and make\u00a0<em>macher jhol, <\/em>a tasty fish curry.<\/p>\n<p>The fish steaks, once freed from their icy tomb, were rubbed with salt and tumeric, then quickly seared in the oil. Once they&#8217;re ready, you make a sauce with tomatoes, onions, garlic, and spices.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_181056.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1410\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_181056.jpg\" alt=\"Fish curry in progress.\" width=\"1024\" height=\"576\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_181056.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_181056-300x169.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_181056-768x432.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_181056-500x281.jpg 500w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>After the sauce has reduced for a while, you put the fish back in to finish cooking, and it&#8217;s time to bring the whole meal to the table!<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_183653.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1411\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_183653.jpg\" alt=\"Eastern Indian meal\" width=\"1024\" height=\"576\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_183653.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_183653-300x169.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_183653-768x432.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_183653-500x281.jpg 500w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><br \/>\nYou may notice four place settings here &#8211; that&#8217;s because we once again had friends!\u00a0 Leigh&#8217;s colleague Laurel and her husband were kind enough to join us and bring a lovely bottle of wine.<\/p>\n<p>And the meal was\u00a0<em>excellent,<\/em> if we do say so ourselves.\u00a0 The dal was creamy and super flavorful, the fish had a lovely bite to it without being overwhelmed by heat.\u00a0 The bread had a bit of an unusual texture from the rice flour, but it was a perfectly good scoop for shoving food into our faces.<\/p>\n<p>And finally, it was time for desert.\u00a0 We made\u00a0<em>chhena poda,\u00a0<\/em>a type of cheesecake that can be made with either\u00a0<em>chhena, <\/em>a fresh curd which we didn&#8217;t want to make, or\u00a0<em>paneer,\u00a0<\/em>which we could just buy. The cheese is blended together with jaggery (palm sugar) and a little cardamom and rice flour.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_150455.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone  wp-image-1412\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_150455.jpg\" alt=\"Chhenna poda in process\" width=\"258\" height=\"453\" \/><\/a><\/p>\n<p>To bake, you line a tin with banana leaves and brush them with ghee.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_145808.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1413\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_145808.jpg\" alt=\"\" width=\"1024\" height=\"576\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_145808.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_145808-300x169.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_145808-768x432.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_145808-500x281.jpg 500w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>The final product has some of the &#8220;squeak&#8221; of fresh cheese curds, and is sweet and delicious.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_191022.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1414\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_191022.jpg\" alt=\"\" width=\"1024\" height=\"576\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_191022.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_191022-300x169.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_191022-768x432.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/09\/20220904_191022-500x281.jpg 500w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>This thing is also so ludicrously easy to make, we&#8217;re going to have to bear it in mind for future potluck situations.<\/p>\n<p>So &#8211; that&#8217;s our whirlwind tour through India.\u00a0 For blog purposes, anyway &#8211; it&#8217;s going to continue to be one of our staple cuisines for regular cooking.\u00a0 (We literally made another dal recipe in the three days between the time of this meal and when I got around to writing it up.)<\/p>\n<p>Next up, Indonesia, and we have friends with THOUGHTS and FEELINGS on that topic.
