{"id":1295,"date":"2022-02-27T20:27:57","date_gmt":"2022-02-28T04:27:57","guid":{"rendered":"https:\/\/fnerk.com\/?p=1295"},"modified":"2022-03-09T21:05:36","modified_gmt":"2022-03-10T05:05:36","slug":"international-meals-honduras","status":"publish","type":"post","link":"https:\/\/fnerk.com\/?p=1295","title":{"rendered":"International Meals &#8211; Honduras"},"content":{"rendered":"<p>&#8220;Did we&#8230; did we just make tacos?&#8221;<\/p>\n<p>A recurring theme of this project is trying to figure out what makes a country&#8217;s cuisine unique.\u00a0 What can we make that is uniquely Albanian, rather than Macedonian?\u00a0 What separates Eritrean food from Ethiopian?\u00a0 Where can we get the right kind of caterpillars for Burkina Faso?<\/p>\n<p>Wait, no &#8211; ignore that last one.\u00a0 We didn&#8217;t make caterpillars for Burkina Faso, and we&#8217;re not making fermented shark in two meals from now.\u00a0 We&#8217;re adventurous, but there are definitely limits.<\/p>\n<p>So for Honduras, we instituted our usual stringent research program of making half-assed internet searches. And in this case, we found recipes that claimed to absolutely be Honduran.\u00a0 Some were even from an official government tourism website.<\/p>\n<p>But&#8230; they didn&#8217;t seem to be dramatically different from the food of other central American countries.\u00a0 Costa Rica has Salsa Lizano.\u00a0 El Salvador has pupusas.\u00a0 Honduras has&#8230; refried beans?\u00a0 Well, OK &#8211; we LIKE refried beans, let&#8217;s see how this goes.<\/p>\n<p>For our main dish, we&#8217;ll be making <em>carneada<\/em>, which is grilled flank steak marinated in bitter orange juice.\u00a0 For our last country, Haiti, we managed to snag the last of the season&#8217;s fresh bitter oranges from Granville market.\u00a0 This week, I realized we needn&#8217;t have gone to QUITE so much effort:<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/03\/20220219_210532.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1296\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/03\/20220219_210532.jpg\" alt=\"Bitter orange juice\" width=\"188\" height=\"328\" \/><\/a><\/p>\n<p>Turns out you can just BUY the stuff in a bottle.\u00a0 Still, I&#8217;m sure fresh juice didn&#8217;t hurt, and the Haitian meal was delicious.\u00a0 Let&#8217;s see how flank steak soaked in the stuff turns out. The marinade also contains garlic, olive oil, cumin, and Worcestershire sauce.\u00a0 Not having any of that last, we just pulled out the aforementioned Salsa Lizano.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/03\/20220219_211505.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1297\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/03\/20220219_211505.jpg\" alt=\"Marinating meat\" width=\"334\" height=\"587\" \/><\/a><\/p>\n<p>Next up, beans.\u00a0 First, the all-important sofrito.\u00a0 This one is bell peppers, garlic, and onion.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/03\/20220220_181612.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1298\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/03\/20220220_181612.jpg\" alt=\"Sofrito\" width=\"477\" height=\"273\" \/><\/a><\/p>\n<p>Next, after blending up cooked kidney beans in a blender, they get dumped into the pot and, well, re-fried.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/03\/20220220_182048.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1299\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/03\/20220220_182048.jpg\" alt=\"Refried beans\" width=\"1024\" height=\"576\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/03\/20220220_182048.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/03\/20220220_182048-300x169.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/03\/20220220_182048-768x432.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/03\/20220220_182048-500x281.jpg 500w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>It was at about this point that we realized I had cut the meat into pieces too small to grill. &#8220;Cubed steak&#8221; means something different than &#8220;steak cut into cubes&#8221;, as it turns out.\u00a0 Fortunately, there&#8217;s a device invented for the express purpose of cooking small pieces of meat on a grill.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/03\/20220220_183432.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1300\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/03\/20220220_183432.jpg\" alt=\"Steak on skewers.\" width=\"1024\" height=\"576\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/03\/20220220_183432.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/03\/20220220_183432-300x169.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/03\/20220220_183432-768x432.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/03\/20220220_183432-500x281.jpg 500w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>This is pre-grilling &#8211; that color is entirely from the marinade.<\/p>\n<p>Just two more things to make &#8211; tortillas and\u00a0<em>chimol,\u00a0<\/em>which seems to be another word for salsa.\u00a0 Tortillas are in principle simple &#8211; masa flour, water, and a little salt.\u00a0 Roll out, and dry fry.\u00a0 We got about six done before we set off the smoke alarm, so that was about it for that.\u00a0 Living in a high-rise as we do now, the last thing we wanted to do was trigger an evacuation of the whole building.<\/p>\n<p>The chimol was onion, pepper, tomato, cilantro, lime juice, and salt.\u00a0 So yeah &#8211; salsa.\u00a0 But, you know, we\u00a0<em>like<\/em> salsa.<\/p>\n<p>And here&#8217;s the final meal:<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/03\/20220220_190928.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1301 size-full\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/03\/20220220_190928-e1646887566357.jpg\" alt=\"Honduran meal\" width=\"778\" height=\"576\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/03\/20220220_190928-e1646887566357.jpg 778w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/03\/20220220_190928-e1646887566357-300x222.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/03\/20220220_190928-e1646887566357-768x569.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/03\/20220220_190928-e1646887566357-405x300.jpg 405w\" sizes=\"auto, (max-width: 778px) 100vw, 778px\" \/><\/a><\/p>\n<p>Beans, meat, salsa, tortillas.\u00a0 What&#8217;s not to like?\u00a0 The meat, in particular, was extremely flavorful.\u00a0 I do wish that I had realized that &#8220;cubed&#8221; means &#8220;hit repeatedly with a spiked mallet,&#8221; because a) that sounds AWESOME, and b) the meat was still a bit chewy. The combination was, however, delicious.<\/p>\n<p>And yet&#8230;<\/p>\n<p>It still bothered me that we had basically grilled steak, and made salsa and refried beans.\u00a0 Wasn&#8217;t there something more&#8230; <em>Honduran<\/em> we could do?<\/p>\n<p>After some more reading, I discovered that one more dish that is strongly associated with Honduras is\u00a0<em>baleadas.\u00a0<\/em>The urban legend is that this dish is named for the corner where a street food vendor was shot. &#8220;Adonde la baleada&#8221; means &#8220;where the shots were fired,&#8221; so &#8220;baleadas&#8221; is basically &#8220;bullets.&#8221;<\/p>\n<p>And what is this dramatically named dish?<\/p>\n<p>Refried beans.\u00a0 In a tortilla.<\/p>\n<p>&#8230;<\/p>\n<p>Well, we\u00a0<em>still\u00a0<\/em>like refried beans, so let&#8217;s give it a shot.\u00a0 The version we&#8217;re trying this time is from the blog of a Honduran immigrant to the US, and starts by charring the daylights out of some onion:<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/03\/20220227_183515.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1302\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/03\/20220227_183515.jpg\" alt=\"\" width=\"407\" height=\"232\" \/><\/a><\/p>\n<p>That&#8217;s blended with the beans and some cumin and refried, and that&#8217;s it.\u00a0 The other two mandatory toppings are cotija style cheese and Honduran <em>crema,<\/em> which we made by mixing sour cream with heavy cream and salt.
