{"id":1279,"date":"2022-02-14T15:11:32","date_gmt":"2022-02-14T23:11:32","guid":{"rendered":"https:\/\/fnerk.com\/?p=1279"},"modified":"2022-02-20T15:57:14","modified_gmt":"2022-02-20T23:57:14","slug":"international-meals-haiti","status":"publish","type":"post","link":"https:\/\/fnerk.com\/?p=1279","title":{"rendered":"International Meals &#8211; Haiti"},"content":{"rendered":"<p>It&#8217;s ironic &#8211; in 2020 and 2021, we started making a lot MORE international meals because the pandemic meant we has lots of free time on our hands.\u00a0 But we&#8217;ve been on pause for a bit BECAUSE of the pandemic.\u00a0 Or maybe that&#8217;s not ironic &#8211; that may only apply to black flies on your wedding day or something.<\/p>\n<p>Next up was supposed to be Guyana, and we were looking forward to sharing the meal with one of my coworkers from that country.\u00a0 However, Omicron came along and shut everything back down again.\u00a0 At which point we just threw up our hands and took a break.<\/p>\n<p>But we&#8217;re back now. We&#8217;ve stuck a pin in Guyana for the time being, and we&#8217;ll come back to it when we are able to get together with my friend, but for today, let&#8217;s talk about Haiti!<\/p>\n<p>Haiti is a country which featured the first successful slave revolt in world history, and has then been systematically screwed over by the world community, the natural environment, and in some cases, its own leaders ever since.\u00a0 The &#8220;No Reservations&#8221; episode on Haiti is particularly gut-wrenching.<\/p>\n<p>On the other hand, the MEAL we made from Haiti was anything but. To start, we had to plan a week or so ahead and make pikliz.\u00a0 Pikliz are apparently THE absolutely ubiquitous condiment on Haiti. They&#8217;re very simple &#8211; shred some veg, pack in vinegar and wait.<\/p>\n<p>Oh &#8211; and make sure to include a truly dangerous quantity of Scotch bonnet\u00a0 peppers.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/02\/20220204_175642.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1280\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/02\/20220204_175642.jpg\" alt=\"Pikliz in process\" width=\"1024\" height=\"576\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/02\/20220204_175642.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/02\/20220204_175642-300x169.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/02\/20220204_175642-768x432.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/02\/20220204_175642-500x281.jpg 500w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>These are going to be a recurring theme, contained as they were in literally every dish on the table.<\/p>\n<p>A week later, we were ready to.. well, start marinating things for the following day.\u00a0 The two leading contenders when you search for &#8220;Haiti national dish&#8221; are Pork Griot and a version of rice and beans called\u00a0<em>Diri Kole.<\/em> Marinating for the latter just involved putting beans in a bowl of water overnight.\u00a0 (not pictured)\u00a0 Not having any small red kidney beans on hand, we used Adzuki beans.\u00a0 I&#8217;m sure it was fine.<\/p>\n<p>Next up, the pork!\u00a0 Pork Griot is a recipe that involves marinating pork in citrus and spices, then boiling it to cook the pork, and finally either deep frying (traditional) or baking (for those who hate deep frying) the chunks to crisp them up.<\/p>\n<p>So lets start with the marinade, at which point we immediately have to back up a step and make green sauce.\u00a0 Haitian green sauce, or\u00a0<em>Epis<\/em>, is similar to the green sauce we bought for Grenada, but substantially spicier.\u00a0 What with the Scotch bonnet peppers and all.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/02\/20220212_195544.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1281 size-full\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/02\/20220212_195544-e1645399988989.jpg\" alt=\"Green sauce ingredients\" width=\"742\" height=\"435\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/02\/20220212_195544-e1645399988989.jpg 742w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/02\/20220212_195544-e1645399988989-300x176.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/02\/20220212_195544-e1645399988989-500x293.jpg 500w\" sizes=\"auto, (max-width: 742px) 100vw, 742px\" \/><\/a><\/p>\n<p>And here&#8217;s the green sauce ingredients &#8211; scallions, thyme, olive oil, parsley, shallots, celery, red pepper, and don&#8217;t think we don&#8217;t see you hiding there, hot pepper.\u00a0 We see you.\u00a0 This just goes in a blender.<\/p>\n<p>Next up, the actual marinade, which includes a bit of the green sauce along with all this stuff:<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/02\/20220212_201615.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1282 size-full\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/02\/20220212_201615-e1645400116444.jpg\" alt=\"Pork marinade ingredients\" width=\"852\" height=\"491\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2022\/02\/20220212_201615-e1645400116444.jpg 852w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/02\/20220212_201615-e1645400116444-300x173.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/02\/20220212_201615-e1645400116444-768x443.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2022\/02\/20220212_201615-e1645400116444-500x288.jpg 500w\" sizes=\"auto, (max-width: 852px) 100vw, 852px\" \/><\/a><\/p>\n<p>So here we have oranges, limes, parsley, thyme, and scallions. But we need to talk about those oranges.\u00a0 Those are Seville, or bitter oranges, used primarily for making marmalade, and only available fresh a small part of the year.\u00a0 We were lucky enough to catch the very tail end of the season and raid the last of the stock at Granville Island. To hell with deep frying.
