{"id":1229,"date":"2021-10-24T11:05:01","date_gmt":"2021-10-24T18:05:01","guid":{"rendered":"https:\/\/fnerk.com\/?p=1229"},"modified":"2021-10-31T11:42:30","modified_gmt":"2021-10-31T18:42:30","slug":"international-meals-guatemala","status":"publish","type":"post","link":"https:\/\/fnerk.com\/?p=1229","title":{"rendered":"International Meals &#8211; Guatemala"},"content":{"rendered":"<p>I have to admit, I&#8217;m not very good at Central American geography.\u00a0 I can pick out Panama on a map, and Belize, for some reason, but the rest I have to check.\u00a0 The irony is that having typed that first sentence, and on looking at a map, I discovered that that Guatemala actually <a href=\"https:\/\/en.wikipedia.org\/wiki\/Belizean%E2%80%93Guatemalan_territorial_dispute\">claims ownership OF Belize.<\/a> Interesting.<\/p>\n<p>But for today we&#8217;re talking about Guatemalan food, which is an interesting combination of indigenous food traditions and colonial influences.\u00a0 There&#8217;s no officially designated national dish, but we&#8217;re going to be making a likely candidate &#8211; a chicken stew called\u00a0<em>pepi\u00e1n.<\/em><\/p>\n<p>So to start, we need chicken.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_180702.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1233\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_180702.jpg\" alt=\"Chicken\" width=\"1024\" height=\"576\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_180702.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_180702-300x169.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_180702-768x432.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_180702-500x281.jpg 500w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>Look! Chicken!<\/p>\n<p>Moving on.<\/p>\n<p>What differentiates this stew is the thick, red sauce, the preparation of which is ninety percent of the effort in making this dish.<\/p>\n<p>First we toast a bunch of stuff.\u00a0 In separate batches, pumpkin seeds, sesame seeds, and a cinnamon stick:<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_181247.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1230\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_181247.jpg\" alt=\"Toasted seed\" width=\"432\" height=\"247\" \/><\/a><\/p>\n<p>Then a bunch of veg &#8211; onions, tomatoes, and two different kinds of dried chilis:<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_183041-e1635704196227.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1231 \" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_183041-e1635704196227.jpg\" alt=\"Charred vegetables\" width=\"401\" height=\"486\" \/><\/a><\/p>\n<p>Then a couple of corn tortillas:<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_181722.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1232\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_181722.jpg\" alt=\"Corn tortillas toasting\" width=\"412\" height=\"236\" \/><\/a><\/p>\n<p>Finally, EVERYTHING goes in the food processor, along with some cilantro. (The chicken does not go in the food processor.)<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_184124.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1234 \" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_184124-e1635704391689.jpg\" alt=\"Pepian sauce\" width=\"416\" height=\"366\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_184124-e1635704391689.jpg 657w, https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_184124-e1635704391689-300x263.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_184124-e1635704391689-342x300.jpg 342w\" sizes=\"auto, (max-width: 416px) 100vw, 416px\" \/><\/a><\/p>\n<p>While we aren&#8217;t pureeing a bird, the sauce IS supposed to get some stock at this point, and the recipe calls for mixing it in the food processor, but we had definitely reached capacity, so instead we mixed everything in the cooking pot and tossed in the chicken to continue cooking.<\/p>\n<p>The recipe also calls for the helpfully unspecific &#8220;vegetables.&#8221;\u00a0 There are many possibilities, but we decided to go with our old central American friend, the <a href=\"https:\/\/fnerk.com\/?p=752\">chayote<\/a>.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_184407.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1235\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_184407.jpg\" alt=\"Chayote\" width=\"1024\" height=\"576\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_184407.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_184407-300x169.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_184407-768x432.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_184407-500x281.jpg 500w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>That get cooked separately so it doesn&#8217;t go mushy in the stew.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_185221.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1236\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_185221.jpg\" alt=\"Cooking chayote\" width=\"1024\" height=\"576\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_185221.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_185221-300x169.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_185221-768x432.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_185221-500x281.jpg 500w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>And finally, everything gets put together and served with corn tortillas:<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_190923.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1237\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_190923.jpg\" alt=\"Pepian de pollo\" width=\"1024\" height=\"576\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_190923.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_190923-300x169.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_190923-768x432.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_190923-500x281.jpg 500w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>This was\u00a0<em>delicious.<\/em> The sauce was very thick and textured, and had a great flavor from the seeds and the charred vegetables.\u00a0 It&#8217;s somewhat reminiscent of a mol\u00e9 sauce without the dark ingredients like chocolate.\u00a0 In theory, it would have been typical to serve it over rice but&#8230; well, we forgot to make rice.\u00a0 It was still excellent, and we ate the leftovers with nice crusty bread.<\/p>\n<p>We did make a dessert as well, a sesame seed cookie called\u00a0<em>Champaduras.<\/em> For this, we got to buy one new-to-us ingredient, <em>Piloncillo<\/em> sugar.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_181553.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1238 \" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_181553-e1635705091344.jpg\" alt=\"Piloncillo sugar\" width=\"222\" height=\"307\" \/><\/a><\/p>\n<p>It turns out to be somewhat difficult to work with, and I don&#8217;t think we got it crushed down as fine as we were supposed to.<\/p>\n<p>In terms of method, it&#8217;s a pretty standard cookie.\u00a0 Mix dry ingredients.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_182201.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1239\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/10\/20211023_182201.jpg\" alt=\"Dry cookie ingredients\" width=\"355\" height=\"203\" \/><\/a><\/p>\n<p>Decide sugar bits are too big, remove to mortar and pestle to mangle for\u00a0 a bit.\u00a0 Return to bowl.\u00a0 (This definitely was NOT in the recipe.)
