{"id":1151,"date":"2021-08-15T18:50:33","date_gmt":"2021-08-16T01:50:33","guid":{"rendered":"http:\/\/fnerk.com\/?p=1151"},"modified":"2021-08-24T21:47:05","modified_gmt":"2021-08-25T04:47:05","slug":"international-meals-germany","status":"publish","type":"post","link":"https:\/\/fnerk.com\/?p=1151","title":{"rendered":"International Meals &#8211; Germany"},"content":{"rendered":"<p>It&#8217;s been a few weeks, both since our last post, and since we made this meal.\u00a0 Our hosting provider decided that we were too small potatoes to justify keeping around, and so we&#8217;ve been moving a bunch of websites, email, and other stuff.<\/p>\n<p>But speaking of potatoes&#8230;<\/p>\n<p>&#8230;which would be a great segue if this meal had actually contained potatoes, but surprisingly enough for a German meal, it didn&#8217;t.\u00a0 Instead we made Sauerbraten, an iconic German dish with rather a long lead time.\u00a0 Five days before the meal, we made a marinade of veggies, vinegar, red wine, and spices:<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/08\/20210810_201546.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1152\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/08\/20210810_201546.jpg\" alt=\"Sauerbraten marinade\" width=\"319\" height=\"422\" \/><\/a><\/p>\n<p>This gets cooked just a bit to soften everything up, and then in goes the roast:<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/08\/20210810_230217.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1177\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/08\/20210810_230217.jpg\" alt=\"\" width=\"361\" height=\"479\" \/><\/a><\/p>\n<p>That goes in the fridge until Sunday, with a periodic flip to make sure both all sides get fully flavored.<\/p>\n<p>On meal day, we made two side dishes and a dessert.\u00a0 The level of continuous effort involved was REMARKABLY high when you consider that &#8220;making&#8221; one of the side dishes consisted of opening this jar of cabbage.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/08\/20210815_184850.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1158 \" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/08\/20210815_184850-e1629856675789.jpg\" alt=\"Red cabbage\" width=\"245\" height=\"319\" \/><\/a><\/p>\n<p>However, all will become clear when we get to talking about the dessert.\u00a0 In the meantime, my colleague Stephan was kind enough to provide his family recipe for Semmelkn\u00f6del, or bread dumplings.\u00a0 In theory, they should be made with stale German rolls, but what we found were more like standard dinner rolls.\u00a0 We got them a few days ahead of time, but I suspect they still needed to be a bit drier than they were.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/08\/20210815_172611.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1165\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/08\/20210815_172611.jpg\" alt=\"Bread rolls being cut up\" width=\"295\" height=\"518\" \/><\/a><\/p>\n<p>The cut up rolls get soaked with milk and left to sit for a bit.\u00a0 Meanwhile you cook some onions in butter, because it&#8217;s a recipe, so of course you have to cook onions in fat at some point. Our second potential mistake crops up here &#8211; I&#8217;m willing to bet we didn&#8217;t mince the onions finely enough.\u00a0 At any rate, you mix the onions with some parsley, and then pour that and a beaten egg over the bread chunks.\u00a0 That gets formed into dumplings.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/08\/20210815_183126.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1160 \" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/08\/20210815_183126-e1629862171141.jpg\" alt=\"\" width=\"268\" height=\"338\" \/><\/a><\/p>\n<p>And the dumplings get boiled in water until they firm up.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/08\/20210815_183143.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1159\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/08\/20210815_183143.jpg\" alt=\"Boiling dumplings\" width=\"226\" height=\"397\" \/><\/a><\/p>\n<p>Ours only got semi-firm.\u00a0 I think we may have gotten the liquid \/ solid ratio wrong as a result of using the wrong kind of buns.\u00a0 That said &#8211; they were still TASTY, I&#8217;m just not sure we did them justice.<\/p>\n<p>Meanwhile, the final cook on the sauerbraten was proceeding.\u00a0 You pull everything out of the pot, and separate the meat, the liquid, and the vegetables.\u00a0 First, you brown the meat by itself. Then you pull the meat out of the pot and brown the veggies and some flour in the same oil.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/08\/20210815_160832.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1171\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/08\/20210815_160832.jpg\" alt=\"\" width=\"377\" height=\"662\" \/><\/a><\/p>\n<p>Finally you add the liquid back in along with the meat, honey, raisins, and&#8230; wait for it&#8230; crushed gingersnaps!<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/08\/20210815_162222.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1170 size-full\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/08\/20210815_162222-e1629862571979.jpg\" alt=\"Crushed gingersnaps\" width=\"432\" height=\"485\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/08\/20210815_162222-e1629862571979.jpg 432w, https:\/\/fnerk.com\/wp-content\/uploads\/2021\/08\/20210815_162222-e1629862571979-267x300.jpg 267w\" sizes=\"auto, (max-width: 432px) 100vw, 432px\" \/><\/a><\/p>\n<p>The gingersnaps apparently act as a thickening agent, as well as providing flavor. That all cooks for a few hours, and then you pull the roast out and cook the gravy down until it&#8217;s the desired thickness.<\/p>\n<p>Interestingly, the recipes I looked at all call for discarding the vegetables at this point.\u00a0 I was a bit puzzled by that &#8211; aren&#8217;t they tasty?\u00a0 I asked Stephan, and he said the concern is food safety &#8211; they frequently aren&#8217;t cooked with the raw meat, but they are marinated with it, so the habit is apparently to either make a fresh batch of veggies, or just not bother with them.<\/p>\n<p>We decided that since we had cooked the veggies with the meat for two solid hours, they were probably safe, so we plated them with the sliced roast, gravy, dumplings and cabbage.\u00a0 And a nice doppelbock to go with.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/08\/20210815_190035.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1156\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/08\/20210815_190035.jpg\" alt=\"German meal\" width=\"294\" height=\"516\" \/><\/a><\/p>\n<p>Sauerbraten, I am pleased to report, is delicious.\u00a0 Sweet and sour and hearty.\u00a0 The dumplings clearly have potential, and hopefully we will do a better job of getting them a bit more solid next time.\u00a0 On the whole, a great meal.<\/p>\n<p>And that&#8217;s it.\u00a0 What could I have forgotten?<\/p>\n<p>Oh right &#8211; dessert.<\/p>\n<p>In the classic tradition of &#8220;idiots who watch the GBBO and think &#8216;how hard could it be?'&#8221;, we decided to make a Black Forest cake.<\/p>\n<p>Step one &#8211; make a sponge.\u00a0 This involves beating lots of air into lots of things and carefully mixing them together. Upon baking, the sponge is allowed to cool and sliced into three equal pieces.\u00a0 Equal-ish.\u00a0 Semi-equal.<\/p>\n<p>OK, not equal.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/08\/20210815_163141.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1169\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/08\/20210815_163141.jpg\" alt=\"Sliced cake\" width=\"1024\" height=\"576\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/08\/20210815_163141.jpg 1024w, https:\/\/fnerk.com\/wp-content\/uploads\/2021\/08\/20210815_163141-300x169.jpg 300w, https:\/\/fnerk.com\/wp-content\/uploads\/2021\/08\/20210815_163141-768x432.jpg 768w, https:\/\/fnerk.com\/wp-content\/uploads\/2021\/08\/20210815_163141-500x281.jpg 500w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>You also have to make a sour cherry syrup using a mix of cherries, cherry juice, corn syrup, and in theory, Kirsch.\u00a0 However, it turns out Kirsch (a cherry liqueur) is super duper expensive, so we left it out.\u00a0 It made the cake a little drier than it should have been, but $40 CAD for a one-use ingredient was hard to justify.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/08\/20210815_171538.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1166\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/08\/20210815_171538.jpg\" alt=\"Cherry filling ingredients\" width=\"314\" height=\"552\" \/><\/a><\/p>\n<p>A note on those cherries &#8211; I went to three different stores looking for the right kind of sour cherries with no luck, so I finally bought a can of regular cherry pie filling, which isn&#8217;t right AT ALL, but would have been something.<\/p>\n<p>Then I walked over to my little neighborhood grocery store because we were out of butter, and they had the right kind. Sigh. At least we got them!<\/p>\n<p>Then, assembly happens! Cake, cherries, whipped cream, cake, cherries, whipped cream, grated chocolate and more cherries.
