Not &#8220;Some&#8221; Gambia. Not &#8220;His Excellency, Rear Admiral Gambia, Esquire.&#8221;\u00a0 Nope.\u00a0 THE Gambia.<\/p>\n<p>Leigh went to THE Ohio State University, so we&#8217;re used to mandatory definite articles. In the case of Gambia, the reason for the specificity is because the leadership of the country were tired of <a href=\"https:\/\/theculturetrip.com\/africa\/the-gambia\/articles\/gambia-vs-the-gambia-whats-in-a-name\/\">their mail being misdelivered to Zambia.\u00a0\u00a0<\/a><\/p>\n<p>I am not making this up.<\/p>\n<p>So what are we making from the smallest country on the African mainland?\u00a0 A beef and peanut stew called\u00a0<em>Domada.<\/em> We&#8217;ve made at least two other peanut stews from Africa on this project, from the <a href=\"https:\/\/fnerk.com\/index.html\/?p=599\">Central African Republic<\/a> and <a href=\"https:\/\/fnerk.com\/index.html\/?p=608\">Chad<\/a>.\u00a0 This one, however, turned out a bit differently.<\/p>\n<p>For starters, this one used sweet potatoes.\u00a0 Now, tubers are a complicated and contentious topic.\u00a0 It takes a lot of research and careful comparison of sources to understand the difference between different kinds of sweet potatoes, yams, and other starchy tubers like cassava and taro, and to identify which one is ACTUALLY most likely to turn up in dishes in a particular locale.<\/p>\n<p>We didn&#8217;t do any research.\u00a0 We just bought this monster and went with it.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/06\/20210612_180429.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1121\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/06\/20210612_180429.jpg\" alt=\"Very large sweet potato\" width=\"576\" height=\"768\" srcset=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/06\/20210612_180429.jpg 576w, https:\/\/fnerk.com\/wp-content\/uploads\/2021\/06\/20210612_180429-225x300.jpg 225w\" sizes=\"auto, (max-width: 576px) 100vw, 576px\" \/><\/p>\n<p><\/a>I normally scale the pictures down to make them fit the text better, but I&#8217;m going to leave this one big, just to help you appreciate the size of this thing.<\/p>\n<p>Other than the giant tuber, there&#8217;s not much else to show here as far as preparation &#8211; you first saut\u00e9 onions, because it really doesn&#8217;t matter WHERE in the world you are cooking &#8211; at least half of ALL recipes start with saut\u00e9ing onions.\u00a0 \u00a0It&#8217;s pretty striking.<\/p>\n<p>Look &#8211; here&#8217;s a picture of some onions.\u00a0 Guess if it&#8217;s from THIS recipe or some other one!<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/06\/20210612_174644.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone  wp-image-1122\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/06\/20210612_174644.jpg\" alt=\"Onions saut\u00e9ing\" width=\"323\" height=\"427\" \/><\/a><\/p>\n<p>It&#8217;s from this one &#8211; we have SOME integrity.\u00a0 But once the onions are ready, you just throw everything else into the pot and let it go for an hour, so not a lot of other pictures.<\/p>\n<p>&#8220;Everything else&#8221; in this case being peanut butter, a few tomatoes, a scotch bonnet pepper, and a the entire cubed sweet potato, along with the beef.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/06\/20210612_185156.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone  wp-image-1123\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/06\/20210612_185156.jpg\" alt=\"Stew cooking.\" width=\"347\" height=\"460\" \/><\/a><\/p>\n<p>It&#8217;s an opaque stew, so not a lot to see in the picture.\u00a0 Here it is served over rice:<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/06\/20210612_185522.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone  wp-image-1124\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/06\/20210612_185522.jpg\" alt=\"Gambian stew\" width=\"459\" height=\"346\" \/><\/a><\/p>\n<p>Also, while I&#8217;ve been very glib in this writeup, I don&#8217;t want to sell this stew short &#8211; of the various African peanut stews we&#8217;ve made so far, this one probably came out the best!\u00a0 The sauce thickened up really nicely, and the overall flavor was hearty and filling.<\/p>\n<p>Nice the job, The Gambia!
