{"id":1043,"date":"2021-05-02T19:38:24","date_gmt":"2021-05-03T02:38:24","guid":{"rendered":"http:\/\/fnerk.com\/?p=1043"},"modified":"2021-05-04T20:10:22","modified_gmt":"2021-05-05T03:10:22","slug":"international-meals-fiji","status":"publish","type":"post","link":"https:\/\/fnerk.com\/?p=1043","title":{"rendered":"International Meals &#8211; Fiji"},"content":{"rendered":"<p>We have reached the Fs!\u00a0 And we won&#8217;t be here long, as there&#8217;s only three of them.<\/p>\n<p>First up is our first country in Oceana &#8211; Fiji!<\/p>\n<p>Unsurprisingly, Fijian cuisine uses a lot of coconut milk.\u00a0 For this meal, we used a full liter of the stuff, which is like half a bald eagle or something &#8211; we&#8217;ve lived in Canada for long enough I don&#8217;t remember any more.<\/p>\n<p>We made three dishes, starting with a coconut bun called a &#8220;Lolo bun.&#8221; There&#8217;s a number of different recipes for this online, most of which look very different from this one.\u00a0 However, this recipe was accompanied by <a href=\"https:\/\/www.youtube.com\/watch?v=DLm71Fq2HCM&amp;ab_channel=NomList\">a video of an actual Fijian grandmother<\/a> type making this in her kitchen, and anyone who remembers our Bulgarian meal knows that we&#8217;re a sucker for grandma videos.<\/p>\n<p>So these were a bit more, as they say on the GBBO, &#8220;rustic&#8221;.\u00a0 You start with a basic yeasted flour dough, and then knead in some butter and brown sugar. This is then formed into balls and placed in a pot.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/05\/20210502_175856.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone  wp-image-1044\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/05\/20210502_175856.jpg\" alt=\"Uncooked Lola buns\" width=\"387\" height=\"513\" \/><\/a><\/p>\n<p>Oddly, this recipe does not call for any rise time at all &#8211; you make the dough, shape the buns immediately, and then get ready to put the pot on the stovetop. (Other recipes for this bun call for baking rather than stovetop cooking, but once again &#8211; grandma.)<\/p>\n<p>There&#8217;s just one more tiny step.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/05\/20210502_180249.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone  wp-image-1045\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/05\/20210502_180249.jpg\" alt=\"Buns cooking in coconut milk\" width=\"348\" height=\"462\" \/><\/a><\/p>\n<p>You DROWN the things in coconut milk. They cook for half an hour or so, and in that time they puff up and get huge, and soak up all the liquid.\u00a0 Here&#8217;s the final product.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/05\/20210502_184331.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone  wp-image-1046\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/05\/20210502_184331.jpg\" alt=\"Lolo buns\" width=\"349\" height=\"461\" \/><\/a><\/p>\n<p>They got huge!<\/p>\n<p>For our main dish, we&#8217;re making the Fijian national dish &#8211; Kokoda! Kokoda is essentially ceviche, or fish &#8220;cooked&#8221; by submerging in acid for a few hours.\u00a0 First, therefore, we&#8217;re going to need to juice one or two citrus fruits.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/05\/20210502_145627.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone  wp-image-1047\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/05\/20210502_145627.jpg\" alt=\"Limes and lemons\" width=\"286\" height=\"379\" \/><\/a><\/p>\n<p>Or six.\u00a0 Fortunately, one of Leigh&#8217;s favorite snacks is citrus corpses, so that worked out well for her.\u00a0 There&#8217;s not much more prep here &#8211; the fish (tuna steak, in this case) is chopped up and tossed into the juice to marinate for a few hours, and that&#8217;s really it.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/05\/20210502_184428.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone  wp-image-1048\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/05\/20210502_184428.jpg\" alt=\"Tuna marinating\" width=\"309\" height=\"407\" \/><\/a><\/p>\n<p>After a few hours, you drain the liquid, toss the fish with some tomatoes and onion, and then pour, you guessed it, a whole bunch of coconut milk over the bowl.<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/05\/20210502_184627.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone  wp-image-1049\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/05\/20210502_184627.jpg\" alt=\"Kokoda\" width=\"321\" height=\"426\" \/><\/a><\/p>\n<p>And that&#8217;s basically it for kokoda.\u00a0 Only one more side dish to go.<\/p>\n<p>A few months ago when we did <a href=\"https:\/\/fnerk.com\/index.html\/?p=891\">Dominica<\/a>, we noted that a) Taro leaves are a staple part of the cuisine there and b) Taro leaves are toxic if not fully cooked.\u00a0 So we chickened out on that one.\u00a0 (But we didn&#8217;t Mountain Chicken out, because that&#8217;s an endangered frog, apparently.)<\/p>\n<p>This week, we gathered our courage, and decided to boil the crap out of some Taro leaves to make the traditional Fijian dish, Roro. (or rourou) Here&#8217;s what they look like whole:<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/05\/20210502_180254.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone  wp-image-1050\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/05\/20210502_180254.jpg\" alt=\"Taro leaves\" width=\"365\" height=\"484\" \/><\/a><\/p>\n<p>The cooking process is simple &#8211; you saut\u00e9 some onion, garlic and chilis, wilt the taro into the pan, and then boil the whole mess until it doesn&#8217;t give you anaphylaxis.<\/p>\n<p>Boil it in what, you ask?<\/p>\n<p>Why, coconut milk, of course!<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/05\/20210502_184747.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone  wp-image-1051\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/05\/20210502_184747.jpg\" alt=\"Taro leaves in coconut milk.\" width=\"362\" height=\"480\" \/><\/a><\/p>\n<p>And here&#8217;s all three dishes in one place:<\/p>\n<p><a href=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/05\/20210502_185216.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone  wp-image-1052\" src=\"https:\/\/fnerk.com\/wp-content\/uploads\/2021\/05\/20210502_185216.jpg\" alt=\"Fijian meal\" width=\"502\" height=\"666\" \/><\/a><\/p>\n<p>This meal was great!\u00a0 The fish was bitingly tangy from the citrus, but the sharp onions balanced that out well.\u00a0 The taro greens had a really nice deep flavor, and are definitely NOT the same as the spinach we&#8217;d been substituting. (And as a bonus, didn&#8217;t kill us.)
